It’s tricky trying to identify Canadian cuisine – it’s just as much tourtiere and cedar planked salmon as it is butter chicken and ginger beef. What we eat in Canada has been defined by the land and the people who have made it home so this week we are going to offer up those influences. We’ve got ingredients like maple syrup, grainy mustard, saskatoon berries, beef, cheese curds, wild rice, pacific salmon, and split peas and somewhat uniquely Canadian items like butter tarts and Nanaimo bars on the menu. It’s an incredible country we live in – one that welcomes, one that includes, one that challenges, one that reconciles, and one that leads. It’s also one that loves to eat! Happy Canada Day!

friday – roast organic chicken
