Roasted Root Vegetables for Friday Chicken Dinners

We’ve had requests to round out the offering with the Friday chicken dinners so we’re going to offer a vegetable add on. During the winter months this will be Roasted Root Vegetables. Root vegetables from Lund’s Organic simply roasted with butter, oil, salt and pepper. The vegetable option can be added to your chicken dinner for $4 for single, $7 for half, and $12 for a whole chicken dinner. We’ll also change the offering with the seasons.

Here are the daily specials for the week of January 19th, 2015:

Monday – Bison Macaroni Casserole

Buffalo Horn Ranch bison, tomatoes, macaroni, green peppers, cabbage all baked with cheddar cheese on top $10 Green salad $4

Tuesday – Hoisin Chicken

Sunworks Farm organic chicken with hoisin glaze, steamed rice, and stir fry vegetable salad $17

Wednesday – Vegetable Pot Pie

Carrots, parsnip, rutabaga, peas, corn, and peppers in a light herb gravy with buttermilk biscuit top $10

Thursday – Italian Meatloaf

Broek Pork Acres pork and Sunworks Farm beef meatloaf with Italian herbs and a tangy tomato glaze served with creamy polenta, roasted root vegetables, and herb gravy $16

Friday – Roast Organic Chicken

Roasted Sunworks Farm organic chicken served with buttermilk mashed potatoes and our famous gravy $48 whole $29 half $16 quarter
