Mardi Gras in Marda Loop – We Goofed – A Month Early

We got excited and goofed on the date for Mardi Gras this year. It’s March 5th.  We’re starting the celebration early and are going to proceed with Chicken Gumbo tomorrow in spite of our error.  I even searched the date but neglected to note the month.  Sorry! On Tuesday we’ll be cooking our Gumbo by starting with a long-cooked roux, trinity (celery, onions, peppers), file powder, sunworks farm organic chicken, tomatoes, and a kick of spicy sausage.  It’s comes with dirty rice.

To cap it off this year we will be making our version of King Cake.  This is the traditional ring-shaped cake that can have a variety of fillings but always has icing and sprinkles in gold(yellow), purple, and green colors.  Gold for power, purple for justice, and green for faith.  We are making ours with a brioche dough, bourbon-soaked raisins, almonds, a touch of nutmeg, and cream cheese icing.  We are leaving out the traditional small plastic baby to avoid any choking lawsuits!  It’s usually placed inside the cake and whomever gets the piece with it in it will have good luck and prosperity and they also must buy the King Cake next time.  It’s a win lose thing.  Pieces of King Cake will be first come first serve on Tuesday.  Laissez les bons temps rouler!

cedar planked wild sockeye salmon, carrots, peas, root vegetables, dill, cream, and whipped potato top  $13

Friday – Roast Organic Chicken

sunworks farm organic chicken served with buttermilk mashed potatoes and our famous gravy  $50 whole  $30 half  $16 quarter  roasted root vegetables add on $15 whole $10 half $6 quarter

Saturday – Crispy Waffles, Cinnamon Rolls, Quiche

crispy belgian waffle cooked to order, maple syrup, sylvan star butter  $7
