Tourtieres Now Available
It’s our holiday tradition here at Forage and we’ve made this year’s edition of tourtiere even better! We start with Broek Pork Acres Berkshire pork and Hoven Farms organic beef, add Broxburn onions, Eagle Creek garlic, and Lund’s Organic carrots then season with herbs and spices from Silk Road Spice Merchants. We make the more savoury version of tourtiere and use rosemary, sage, thyme etc. The difference for this year is the addition of pastry made by Pascal’s Patisserie. We have absolutely fallen in love with their proof and bake frozen French pastries (we sell their Pain au Chocolat, Croissants, and Cinnamon Rolls) and approached them about producing the pastry for our tourtieres. Pascal has a pastry sheeter that saves Genevieve from hand rolling all that pastry. To make things even better, they share the same local philosophy as us so their pastry in made with Highwood Crossing organic flour and real butter. In the past we used a lard pastry but wait till you try our new tourtiere with their butter pastry – it’s even better! The Forage Tourtiere is a 9 inch pie that’s over 3 pounds and will easily feed 5-6 adults for $32. They are frozen with the filling fully cooked and the pastry not so when the pastry is golden they are ready to go. All you need to do is thaw the tourtiere in the refrigerator overnight and bake in a 350F oven for 45-60 minutes until golden. As always we’ll also have jars of Quebec Tomato Ketchup and Cranberry Chutney for sale to compliment the tourtieres. Tourtieres go on sale Monday, December 2 and are first come, first serve. We will continue to make more over the next couple weeks so if we are sold out be sure to ask when the next batch might be available.

Hoven Farms organic beef in a mushroom sour cream sauce served over white rice $15
Friday – Roast Organic Chicken
Sunworks Farm roast organic chicken served with mashed potatoes and our famous gravy $45 whole $28 half $16 quarter
