The Dead of Winter
So this is the toughest time of year to eat locally. The root vegetable crops are starting to deteriorate in storage and supply is dwindling. Of course we have plenty of proteins that are now available fresh year round but it seems that summer and fresh crops are eons away! Don’t worry new crops are on the horizon. We have amazing Heritage Greens from the greenhouses at Green, Eggs, and Ham and new crop baby cucumbers are coming in from Broxburn. Also, the peppers and tomatoes are just a month or so away. Then we’ll see stinging nettles and then asparagus and then an explosion of fresh vegetables through the summer months. We just have to tough out the next month of winter and all will start to come to life!
