Feature Farmer – Hoven Farms
It’s a rare thing to see a ranch reach its 100th birthday and even rarer to see it still with the same family. Four generations of Hoven’s have been ranching their little piece of heaven near Eckville and with 8 little Hoven’s on the farm now there’s a good chance it will stay that way. Tim Hoven currently raises certified organic beef and the farm going organic is something relatively new. Like all successful things, the operation is fairly simple. Use pasture management to keep the animals on fresh grass, let them calve in May when the weather is warmer, and basically let the animals live lives that aren’t interfered with. We’ve been using Hoven beef exclusively for years now and Tim has moved into another phase of his business by being a founding partner in the new Kingsland Farmers Market.
On the Menu
Resolution Buster – We couldn’t resist… Peanut Butter Cup Brownies this week! We have also added Heritage Greens from Greens, Eggs, and Ham. They are a farm located near Leduc and there is a minimum 15 varieties in their mix. We also brought back a small amount of Canned Albacore Tuna from the French Creek Marina on our trip to the island.

Monday – Bison Shepherd’s Pie
Buffalo Horn Ranch bison, carrots, peas, corn in a herb gravy topped with whipped potatoes $10
Tuesday – Butter Chicken
Sunworks Farm organic chicken simmered in a curry, tomato, and cream sauce served with basmati rice $14
Wednesday – Baked Pesto Tortellini
Cheese tortellini, pesto cream, grape tomatoes, spinach topped with mozzarella $9
Thursday – Beef Stroganoff
Hoven Farms organic beef in a sour cream and mushroom sauce served with white rice $13
Friday – Roast Organic Chicken
Sunworks Farm roast organic chicken served with buttermilk mashed potatoes and our famous gravy $40 whole $26 half $15 quarter
