Feature Farmer – Lund’s Organic Farm
I love telling the story of Lund’s Organic Farm because I think it covers just about every issue in local food production there is. Gert and Betty Lund operate their farm on the north side of Innisfail and their soil is over 24 inches of 20 year old certified organic black gold. It is through years of caring and enriching it that Gert is able to coax better carrot yields than accepted conventional operations (something that is believed to be impossible). We get carrots, potatoes, beets, cabbage, kale, spinach, lettuce, parsnips, chard, among other things from them throughout the year.

Monday – Chicken Paprikash
Sunworks Farm organic chicken simmered in a Hungarian paprika and sour cream sauce with peppers and egg noodles $13
Tuesday – Italian Meatloaf
Broek Pork Acres pork, Hoven Farms organic beef meatloaf with Italian seasonings, roast garlic mashed potatoes, roast peppers and carrots $14
Wednesday – Macaroni and Cheese
Our take on the classic dish jammed full of Sylvan Star gouda and cheddar $9
Thursday – Pork Normandy
Broek Pork Acres Berkshire pork braised in an apple cider and mushroom sauce served over white rice $13
Friday – Roast Organic Chicken
Sunworks Farm roast organic chicken served with buttermilk mashed potatoes and our famous gravy $40 whole $26 half $15 quarter
